- Cook pasta according to package directions.
- In a large pot, boil 4 cups of water, adding salt and sugar to water.
- Add asparagus, boil for 3-5 minutes.
- Strain asparagus thoroughly, set to the side to allow it to cool.
- In a medium pan, saute garlic in avocado oil or vegan butter.
- Add vegan scallops, searing on each side until golden brown.
- Top pasta with scallops, asparagus, and vodka sauce, garnish with parsley and enjoy
Tips
Cook scallops in an air fryer by spraying the air fryer with avocado oil, setting to 360 degrees for 10 minutes.
